We are hiring!  MD Anderson has a Sous Chef opening in Houston, TX (Texas Medical Center). This position provides people management, staff training, recipe development while coordinating and leading meal preparation with the production team for patient and retail dining.

Scope  Impacts the production of quality food in a safe environment in compliance with regulatory requirements.

Essential Job Functions  Reviews menus, food demand trends, and plan new menus, develop recipes based on dietary expectations as established by the dietitians and Food and Nutrition leaders.  Assists with inventory and ordering of food and supplies.  Monitors computer generated information regarding product acceptability, revenue performance and cost evaluations.  Develops and implements policies, procedures and methods for food production in consultation with the Executive Chef. Works with production personnel to prepare, cook and bake food products.  Maintains required records, reports, files, statistics and standard recipes as directed. Assists with care and maintenance of equipment and facilities. Monitors workflow to promote efficiency in food processing functions. Coordinates and participates in human resource functions.

Other duties as assigned.

REQUIREMENTS

Education

Required:  High school diploma or equivalent. 

Preferred:  Associate's degree in culinary arts or Bachelor's degree in Culinary Arts Management. 

Experience

Required:  Five years of experience in food preparation in an institutional or commercial establishment to include one year in a supervisory capacity.  Successful completion of the LEADing Self Accelerate program may substitute for one year of required supervisory or management experience.

Licensure/Certifications

Required:  ServSafe Certification Accredited by the American National Standards Institute and the Conference for Food Protection (ANSI)

Preferred:  Certified Dietary Manager (CDM) from the Association of Nutrition & Foodservice Professionals (ANFP)

Must pass pre-employment skills test as required and administered by Human Resources.
